Paleo Tahini Banana Bread
6 tablespoons almond butter
6 tablespoons tahini
1/2 cup maple syrup
1/2 cup bananas
3 tablespoons melted coconut oil
2 teaspoons lemon juice
2 teaspoons vanilla extract
1/4 cup coconut flour
1.5 tablespoons cinnamon
2 teaspoons baking powder
1/4 teaspoon salt
Preheat the oven to 325 degrees F
Oil a loaf pan with melted coconut oil and then put parchment paper on the bottom.
In your food processor, combine the eggs, almond butter, tahini, maple syrup, bananas, coconut oil, lemon juice, and vanilla. Process until smooth.
Add the rest of the ingredients and blend until thoroughly combined.
Pour the batter into the loaf pan or pans. If using small pans, cook for approximately 35 minutes or until a toothpick you insert comes out clean. If using a larger loaf pan, cook for 40-45 minutes, again until the toothpick comes out clean.
Remove the loaf from the oven and allow it to cool in the pan.
