
Green Goddess Dressing with Hemp and Arugula | Whole30, Paleo

This spin on a health food classic nixes the mayo and uses all fresh herbs for a delicious, thick and creamy dressing that doubles as a dip for... just about anything you can imagine!
Ingredients
1 C fresh parsley
1 C arugula
2 Tbsp fresh tarragon
3 Tbsp fresh chives
1 garlic clove, peeled and ends removed
1/4 C lemon juice
1 tsp white wine vinegar
1/2 C extra virgin olive oil
1/4 C water

1/4 C Artisana Hemp Butter
1/2 tsp salt
1/4 tsp pepper
Directions
Combine all ingredients in a blender and blend until smooth (or slightly chunky if you prefer that texture!). Add more lemon, salt and pepper to taste.
To serve, drizzle over crisp greens like romaine or use as a dip with fresh or cooked vegetables.
Store in a sealed container in the refrigerator. Use within three days.
