Coconut Garlic Mayo

Using our coconut butter, this lemon garlic mock mayo is 100% mouth watering and perfect for dipping and spreading.
½ cup Artisana Raw Organic Coconut Butter, slightly warmed
½ cup warm water
¼ cup extra virgin olive oil
2 medium garlic cloves
1 Tbsp fresh squeezed lemon, meyer lemon preferred
¼ tsp sea salt
Ground pepper to taste
*Optional: Minced parsley for garnish.
Scoop out about ½ cup of coconut butter and warm in a pot on low heat. Careful not to burn the butter. This should only take about 1 min or less.
Peel garlic and place all the ingredients except the oil in a food processor or blender and blend on high. Slowly pour oil in until the mixture thickens. The entire mayo process should take about 1-2 minutes. Any leftover store in a jar- will keep for a couple weeks in the fridge. Enjoy!
