Birthday Cake Protein Bars | Vegan
Forget the store-bought protein bars and make your own organic ones! These delicious, good-looking snacks were developed by our friends at Edward & Sons using their organic coconut flour and Artisana organic cashew butter. Don't forget the sprinkles!
Line a loaf pan with parchment paper and set aside.
In a large bowl, combine cashew butter, maple syrup, vanilla extract and almond extract. Stir until combined.
Fold in protein powder and coconut flour. The dough should be thick and not wet. If it is wet, add in 1 Tbsp of coconut flour at a time until the dough is pliable.
Transfer the dough into the loaf pan with parchment paper. Press in with the bottom of something flat to make sure your bars are all one level of thickness. Top with sprinkles and press again.
Freeze for 20-30 minutes.
Remove from freezer and slice into bars.
These can be stored in a sealed container in the refrigerator or freezer. If you stack them on top of each other, we recommend separating each layer with a sheet of parchment paper.
